The little snow storm we had this weekend prompted a lot of cozy holiday activities. We decorated our tree, lounged around in pajamas all day watching House of Cards, and ate grilled cheese and tomato soup. When the craving for something sweet hit, I turned to these easy peanut butter cookies.
One note: I used coconut sugar in this recipe, but regular sugar (or the 1/2 regular sugar, 1/2 brown sugar mixture from the original recipe) will yield cookies that are lighter in color and flavor.
Flourless Peanut Butter Cookies adapted from Joy the Baker
1 cup all-natural peanut butter (peanuts should be the only ingredient)
1 cup coconut sugar
1 teaspoon baking soda
Preheat oven to 350 degrees f. Line a baking sheet with parchment paper and set aside.
Mix peanut butter and sugar together until completely combined. Add egg and baking soda and mix again until completely combined. Roll dough into small balls (it will be very sticky) and place onto lined baking sheet. With a fork, make a criss-cross on the tops of the cookies and bake for 10 minutes. Remove from oven and allow cookies to cool completely before eating.
